Amaranth is a fast-growing amaranth plant, with leaves, stems and flowers in purple, red and gold tones that grows in the high regions of Ecuador, Bolivia, Peru and Argentina. It was  cultivated by the Aztecs  and in other tropical climates, and now this superfood is making a comeback for its high protein content, its richness in fiber, and because it is gluten-free.
